Tomatillo Salsa

This salsa combines the smokey caramelization of roasted tomatillos with the fresh bright flavor of uncooked jalapeños, cilantro, and lime.

1 qt tomatillos
1 onion, sliced thinly
2 jalapeños, seeds removed and then sliced thinly
4 cloves garlic, , sliced thinly
1 bunch cilantro, roughly chopped
2 limes, zest and juice


  1. Heat oven to 400F
  2. Remove tomatillos from their lanterns and cut in half
  3. Heat a glug of neutral oil in a large frying pan until just about smoking
  4. Add the tomatillos with a big pinch of salt and allow to blister
  5. Flip the tomatillos and then place in the oven to roast until tender
  6. Remove from oven and allow to cook
  7. In a food processor combine all ingredients except the cilantro and buzz into a chunky salsa
  8. Add the cilantro, taste and adjust seasoning as desired
