Tin Foil Whitefish with Spring Onions and Giardiniera

There's nothing easier than assembling these packets early in the day (or the day before) and then baking or grilling just before dinner is served. Pair with any sort of summer salad including potato or pasta.

Ingredients

4 portions of whitefish (1-2 filets cut into portions depending on the how hungry your guests are)
1 bunch spring onion, sliced thinly including the green stems
1 cup giardiniera
1 bunch parsley, dill, or cilantro (or a mix)

Method

  1. Tear 4 pieces of tin foil roughly 12"x12"
  2. Lightly drizzle the tin foil with olive oil
  3. Place the fish skin side down, season liberally with salt and pepper
  4. Top with the onions and giardiniera and drizzle again with olive oil
  5. Fold up the tin foil to make a pouch
  6. Bake or grill until the fish is cooked through, about 8 minutes
  7. Open the pouch and top with the chopped herbs and serve
