Sweet Potato Mash

These are light and fluffy with the perfect balance of sweet and salt and no heavy cream to weigh you down. If you're avoiding dairy entirely, swap olive oil for butter and be on your way.

3 lbs sweet potatoes
2 oz butter
1/4 cup maple syrup
1/4 cup soy sauce


  1. Heat oven to 350F
  2. Prick the washed sweet potatoes all over with a pairing knife or fork
  3. Roast the sweet potatoes directly on the oven rack or on a baking tray until they are tender when pressed with a finger (about 40 minutes)
  4. Remove from the oven and let cool until cool enough to handle
  5. Peel back the skins and discard
  6. Transfer the flesh of the sweet potatoes to a bowl
  7. Add the butter, maple syrup, and soy sauce and mash until well combined
  8. Taste and add more of each as desired
