Sweet and Sour Stir-Fried Radishes and Kale

This is a very satisfying way to eat up your greens and goes great over a bowl of rice or even tossed with rice noodles for a quick lunch.

Ingredients

1 tbsp soy sauce
2 tsp maple syrup
1 tbsp white balsamic or rice wine vinegar
1/4 cup water
1 tsp cornstarch
6 cloves garlic, minced
2 inch piece of ginger, peeled and minced
2 bunches radishes, leaves cut into ribbons and root cut into wedges
1 bunch kale, leaves stripped and cut into ribbons or use any Asian style green or mustard green
4 scallions, sliced thinly

Method

  1. Combine the soy sauce, maple syrup, vinegar, water, and cornstarch
  2. In a hot frying pan heat a glug of neutral oil until smoking hot
  3. Add the ginger and garlic with a pinch of salt and cook for 10 seconds, being sure that the garlic doesn't brown
  4. Add the radishes, their greens, the kale, and scallions to the pan and stir to combine
  5. Cook until the greens have started to wilt, about 2 minutes
  6. Add the soy mixture and continue cooking until the radishes are nicely glazed, about 30 seconds
