Summer Fruit Cobbler

This is one of our all time favorite desserts both because it is so easy to remember and because you can use up any fruit you have on hand.

3 qt summer fruit: cherries, raspberries, blueberries, peaches, apricots, etc
2 cups all purpose flour
2 cups whole milk
2 cups sugar
2 T baking powder
1/2 tsp salt
4 oz butter


  1. Heat oven to 375F
  2. Place fruit in the bottom of a 9x13" baking dish
  3. Whisk together the flour, sugar, baking powder, and salt
  4. Add the milk and whisk to combine into a batter similar to a pancake batter
  5. Pour over the fruit
  6. Dot the butter all over the top of the batter especially in the corners of the pan
  7. Sprinkle extra sugar on top of the batter and bake until the topping is cooked through and golden brown
  8. Remove and serve warm or room temperature and with a healthy dollop of sour cream or whipped cream
