Steam-roasted Beets

This is our favorite way to cook beets. You can cook a large amount at one time and then use up throughout the week.

  1. Scrub the beets free of any stray dirt
  2. In a baking dish, toss the beets with a glug of neutral or olive oil, pinch of salt, and any herbs you want to use (thyme, rosemary, bay etc)
  3. Add a 1/4 cup of water to the pan and then cover with a tight fitting lid or tinfoil
  4. Bake at 350F until the beets are tender, usually about 30 minutes depending on the size of the beet
  5. Remove from the oven, allow to cool to the touch, and then rub off the skins with a paper or kitchen towel
