Steak Tacos

The nice thing about tacos is that they go with just about anything-- feel free to pair with a green salad, a cabbage slaw, roasted roots, or freshly cut tomato and cucumber salad.

1 pack madre masa tortillas
4-8 oz steak cut into strips
1-2 radishes, grated (optional)
4 oz feta or queso fresco, crumbled (optional)
cilantro microgreens (optional)
2 scallions, sliced thinly
jalapeño hot sauce


  1. Heat a frying pan over high heat until smoking hot
  2. Quickly pan fry the steak until medium rare, about 3 minutes stir and then another 2 minutes
  3. Wrap the tortillas in a slightly damp kitchen towel an microwave for 30 seconds to warm
  4. When the steak is done cooking, let rest 3 minutes
  5. Build the tacos with a bit of steak, a little bit of grated radish, crumbled cheese, few cilantro microgreens, couple of scallions and a drizzle of hot sauce on each
