Spring Green Quiche

This light and delicate quiche is a great way to showcase any variety of tender spring greens.

Ingredients

1 ball flakey pie dough
2 cups half and half
4 eggs
1 tsp salt
4-6 oz cheddar style cheese, grated
4-6 oz tender greens-- spinach, baby kale, peashoots or microgreens

Method

  1. Bring the pie dough to room temperature and then roll it into a large round
  2. Place the dough into a 9 inch pie plan and crimp the edges
  3. Chill dough for min 30 min to set
  4. Heat oven to 350F then blind bake, with baking beans, until golden brown and set, about 20 minutes
  5. Reduce oven temperature to 325F
  6. Meanwhile, whisk eggs, half and half, and salt together
  7. In the par-baked shell, place the greens and cheese
  8. Pour the dairy mixture over the greens and cheese
  9. Transfer to the oven and bake until the custard is set, about 35 minutes
  10. Remove from the oven and let rest 10 minutes before serving
  11. Serve alongside a fresh green salad
