Spinach Salad with Chestnuts and Dried Cherries

This salad is perfect for any meal in the fall all the way through the holiday season.

1 bag spinach or arugula
1 pt chestnuts
1 cup dried cherries
2 T olive oil
2 T sherry or apple cider vinegar
salt and pepper


  1. Wash and dry the spinach
  2. Roast the chestnuts
  3. Dress the spinach with the olive oil, vinegar, salt and pepper
  4. Transfer to a serving platter
  5. Scatter the chestnuts and dried cherries over the greens and serve
