Spinach Apple Salad with Creamy Mustard Dressing

This creamy mustard dressing is perfect for topping spinach or any other green salad.

2 tbsp apple cider reduction
2 tbsp whole grain mustard
1 cup heavy cream
1/2 tsp salt
1 bag spinach
2 apple, sliced thinly
1/2 cup pecans, toasted


  1. Combine the cider reduction, mustard, salt, and cream and whisk to combine.
  2. Taste and adjust seasoning adding more reduction or salt as needed
  3. In a large bowl combine all the other ingredients with a pinch of salt and several grinds of black pepper
  4. Toss to coat, taste and adjust seasoning and serve
