Sheet Tray Salmon with Brussels Sprouts and Lemon

This one pan dish is perfect for a quick mid-week meal or when company comes over.


Ingredients

1 quart brussels sprouts, trimmed and cut in half
1 red onion, cut into wide petals
2 lbs fingerling potatoes, cut into 2 inch pieces
1 butternut squash, peeled and cut into cubes
1 lemon, cut into thin rounds
2 sprigs rosemary, optional
4 filets salmon, preferably skin on

Method

  1. Heat oven to 400F
  2. Toss everything except the salmon together with a hefty glug of olive oil, couple pinches of salt and grinds of black pepper
  3. Transfer to a baking sheet and roast for 20 minutes or until the carrots and potatoes are tender
  4. Lightly oil the salmon with olive oil and season with salt and pepper
  5. Remove the tray from the oven, nestle the salmon, skin side down, between all of the vegetables and return to the oven
  6. Bake until the salmon is just cooked through, about 12-16 minutes
  7. Remove from the oven and serve-- the skin will stick to the tray but that's ok, it is easy to lift the fish away and leave the skin behind
