Shawarma Grilled Summer Squash

Bread cheese is the perfect grilling cheese because it holds its shape and won't melt through the grates. It lends a nice creaminess to the rich squash and tangy tomatoes.

4-6 medium summer squash
2 tsp shawarma spice
4-6 oz bread cheese, cut into long pieces
1-2 heirloom tomatoes, cut into chunks
1 clam microgreens, optional


  1. Heat grill to medium high
  2. Tip and tail the squash and then cut it in half lengthwise
  3. Toss the squash with a big glug of olive oil and the shawarma spice and grill, cut side down, until well-charred and starting to tenderize
  4. Flip and repeat
  5. Grill the bread cheese until soft
  6. Transfer the squash to a serving platter, scatter the tomato chunks all over, finish with the grilled bread cheese and the microgreens if using
