Rye Whiskey Sabayon

This sauce is delicious spooned over any pile of roasted or fresh vegetables. It is rich from the yolks, creamy from the goat cheese, spiked with the acidity of the wine and heat of the whiskey.

6 egg yolks
1/2 cup white wine
1 oz rye whiskey
6 oz goat cheese
1/2 tsp salt


  1. Bring a medium pot of water to a boil.
  2. In a bowl that will fit over the water pot without touching the bottom to the water, place the yolks and wine.
  3. Whisk vigorously until the liquid has tripled in volume and there is no visible liquid left at the bottom (like making a mousse).
  4. Remove from the heat, add the whiskey, goat cheese, and salt and whisk to combine.
  5. Pour over the vegetables of your choosing (we like: asparagus, green beans, summer squash, winter squash, potatoes, radishes, and cherry tomatoes).
