Rutabaga Latkes

Just like their potato counterparts, rutabaga latkes are crispy on the outside and tender on the inside, and just like all of us benefit from being served with apple sauce and sour cream.

Ingredients

4 tbsp butter
2 apples, peeled and cut into chunks
2 rutabaga, peeled and grated
1 egg
2 tbsp all purpose flour
4oz sour cream

Method

  1. In a medium sauce pan melt the butter until foamy
  2. Add the apples with a pinch of salt and cook down until soft
  3. Combine the grated rutabaga with the egg and flour seasoning with salt and pepper
  4. Heat a large glug of neutral oil in a large frying pan over medium high heat
  5. Pan fry 1/4 cup of the rutabaga mixture pushing the mixture into pancake form and then cook until the rutabaga is golden brown
  6. Flip and cook the other side
  7. Remove the finished latkes to a rack or baking tray to hold
  8. Serve with a hefty dollop of sour cream and big spoonful of the apple sauce
