Roasted Cabbage and Apple Salad

Roasting cabbage brings out the natural sweetness and gives a nice texture alongside seared fish or grilled meats or to compliment a platter or roasted root vegetables.

1 head napa cabbage, cut into ribbons
1 apple, core removed and apple diced
1/2 cup apple cider vinegar
2 tbsp maple syrup
1 tbsp whole grain mustard
1/2 cup olive oil
6 sprigs parsley, chopped


  1. Heat the oven to 400F
  2. Toss the cabbage with a glug of olive oil and a big pinch of salt
  3. Lay out on a baking sheet an roast until crispy and golden brown
  4. Dice the apple then combine with the vinegar, maple syrup, and mustard and let sit for 10 minutes
  5. Add the olive oil to the apples
  6. When the cabbage comes out of the oven immediately dress with the apple mixture and chopped parsley
  7. Serve warm or room temperature
