Roasted Broccoli with Whipped Feta and Roasted Cherry Tomatoes

Broccoli and cheese is not a ground breaking combination, but add in roasted cherry tomatoes and some toasty pecans and it is a welcome platter on any table.

2 crowns broccoli, cut into florets
4 oz feta
1 lemon, zest and juice
1/4 tsp chili flake, optional
1 cup roasted cherry tomatoes, fresh or frozen
1/2 cup pecans, toasted


  1. Heat the oven to 400F
  2. Toss the broccoli in a good glug of olive oil with a pinch of salt and pepper then roast until caramelized and tender, about 20 min
  3. In a food processor blend the feta with the lemon zest, juice, and chili flake if using until smooth and light
  4. Pool the feta on a serving platter
  5. Top with a pile of the roasted broccoli
  6. Dot the cherry tomatoes all over and finish with a scattering of the toasted pecans
  7. Serve warm or room temperature
