Queso Fundido
This slightly spicy, super melty appetizer can become a meal if you eat enough of it.

Ingredients
4 oz Mexican style chorizo, crumbled
4 poblano peppers, sliced thinly
1 onion, diced
3 garlic cloves, minced
12 oz melty cheese like cheddar, havarti, or jack, grated
3 scallions, sliced finely
tortillas for serving
Method
In a skillet, brown the chorizo over medium high heat until cooked through
Remove the meat, leaving the oil behind
Add the poblanos, onions, and garlic with a pinch of salt, reduce the heat to medium low, and cook until soft
Add the chorizo back into the poblano mixture and then divvy between oven proof dishes or keep in one large skillet
Top with the cheese
Place under a high heat broiler and bake until the cheese is melted and starting to brown
Remove and serve with the tortillas
