Potato Wedges with Tzatziki

We make our tzatziki with pickles for an extra little bit of zip.

Ingredients

2 lbs potatoes, any variety, cut into wedges
1/2 tsp smoked paprika (optional)
1 cup tzatziki

Method

  1. Heat oven to 425F
  2. Toss the potato wedges, paprika, a hefty glug of olive oil, big pinch of salt, and grind of black pepper
  3. Transfer to a baking tray and roast until the potatoes are tender and crispy
  4. Remove from the oven and top with the tzatziki to serve
