Pickled Beets

This is our standard pickling ratio it just happens to be perfect for beets.

Ingredients

3 lbs beets, cooked, peeled, and cut into pieces
2 cups rice wine vinegar or apple cider vinegar
1 cup water
1 tbsp salt
1/2 tbsp sugar

Method

  1. Bring everything except the beets to a rolling boil over high heat
  2. Transfer the beets to a heat proof storage container
  3. Pour the pickle liquid over the beets and let cool before covering and transferring to refrigeration
