Peas and Pearl Pasta

Spring in a bowl! Serve either as a light dinner or hearty lunch.

1 qt shelling peas
2 C pearl pasta aka turkish cous cous
1/2 C olive oil
1 lemon, zest and juice
1 bag spinach
1 bunch radish


  1. Shell the peas
  2. Heat a medium sized pot of salted water to a boil
  3. Blanch the peas in the boiling water until bright green and floating (about 3 minutes)
  4. Lift from the water and cool 
  5. In the same water boil the pasta until tender (about 7 minutes)
  6. Drain and combine the peas and pasta
  7. Dress the pasta mixture with the lemon zest, juice, olive oil, and a big pinch of salt 
  8. Thinly slice the radishes
  9. Combine the pasta mixture with the spinach and radishes
  10. Toss to combine, taste, adjust seasoning as desired, and serve
