Peas Recipes
Peas and Pearl Pasta
Spring in a bowl! Serve either as a light dinner or hearty lunch.

Ingredients
1 qt shelling peas
2 C pearl pasta aka turkish cous cous
1/2 C olive oil
1 lemon, zest and juice
1 bag spinach
1 bunch radish
Method
Shell the peas
Heat a medium sized pot of salted water to a boil
Blanch the peas in the boiling water until bright green and floating (about 3 minutes)
Lift from the water and cool
In the same water boil the pasta until tender (about 7 minutes)
Drain and combine the peas and pasta
Dress the pasta mixture with the lemon zest, juice, olive oil, and a big pinch of salt
Thinly slice the radishes
Combine the pasta mixture with the spinach and radishes
Toss to combine, taste, adjust seasoning as desired, and serve
