Peanut Noodles with Tofu

Ingredients

3 limes
1/2 cup hot water
1/3 cup peanut butter
2 tbsp soy sauce or fish sauce
1 tbsp maple syrup
12 oz rice or ramen noodles, cooked to the packages instructions
1 lb silken tofu, cubed
1 bunch scallion, sliced thinly
2 carrots, grated
1 hot chili, sliced thinly or chili crisp to finish
1/2 cup herbs cilantro, mint, or basil

Method

  1. Zest and juice one lime and combine with the hot water, peanut butter, maple syrup, and soy (or fish) sauce then whisk to a smooth sauce adding more water as needed
  2. Dress the noodles with the sauce and then add the cubed tofu, scallions, carrots, and chili
  3. Taste and adjust seasoning as needed
  4. Serve with a hefty handful of the chopped herbs and the remaining limes, cut into wedges, on the side
