Onion Dip

Slowly caramelizing onions and then folding in rich sour cream and some smokey spices makes for a dip that knocks the store-bought packets out of the water.

Ingredients

5 lbs storage onions, sliced thinly
16 oz sour cream or creme fraiche
1 tsp smoked paprika
1/4 tsp cayenne pepper
salt to taste

Method

  1. In a large, wide pot, heat several glugs of olive oil or knobs of butter over medium heat
  2. Add the sliced onions and several pinches of salt and slowly cook until the onions are a deep and golden brown (about 30 minutes)
  3. Cool the onions completely
  4. Add the sour cream and spices and stir to combine
  5. Serve cold or room temp
