Mustard Greens and Tuna Salad

This is a favorite spring salad around the farm. Hearty enough to fill you up. Light enough to go back to work.

1 bag mustard greens
1 can tuna
1 can chickpeas
1/2 C mayo
1 lemon
1/2 tsp salt
1 bunch radish


  1. Wash and dry the mustard greens
  2. Open and drain the tuna and chickpeas
  3. Whisk together the mayo, lemon juice, lemon zest, and salt
  4. Cut the radishes into thin rounds
  5. Dress the mustard greens with the mayo dressing 
  6. Lightly toss the greens with the chickpeas, tuna, and radishes 
  7. Garnish with several grinds of black pepper and serve
