Lowland Slaw

The Carolinas are known for their vinegary slaw. This is our lake-level, Granor version. Perfect for a summer sandwich or to pair with grilled fish. Note that if making in advance, seasoning the vegetables with salt will soften the vegetables and dilute the sauce. Taste again before serving to adjust seasoning accordingly.

Ingredients

1/2 cup dijon mustard
1/2 cup whole grain mustard
1/3 cup sugar
1 tsp celery seed
1 cup neutral oil
3/4 cup apple cider vinegar
4 cups shredded cabbage, any variety but a purple green combo makes it cute
1 cup shredded carrot
2 kohlrabi, cut into matchsticks
1 red onion or scallion, sliced thinly
1 bunch parsley, roughly chopped

Method

  1. Combine everything except the vegetables into a dressing
  2. Combine the vegetables, dress with as much dressing as desired
  3. Season with salt and pepper
