Kohlrabi, Apple, Wild Rice Salad

This dressing is held together with a warm butter dressing. If making the butter sauce is too much, feel free to dress with any vinaigrette of your choice.

2-3 kohlrabi
1-2 tart apples
1/2 cup wild rice
1 quart sweet apple cider
1 shallot
4 oz butter


  1. In a medium sized sauce pan, boil the wild rice with 2 cups of water until cooked through and puffed
  2. Peel the kohlrabi and cut into matchsticks
  3. Slice the apple thinly
  4. Mince the shallot
  5. In a large sauce pan reduce the apple cider until thick and syrupy 
  6. Add the shallot 
  7. Slowly add in the butter bit by bit, whisking the whole time to make a beurre blanc sauce
  8. When the rice and butter sauce are done, combine the kohlrabi, apple and wild rice together with a pinch of salt and black pepper. 
  9. Transfer to a serving platter and drizzle liberally with the warm butter sauce and serve immediately.
