Kohlrabi and Tzatziki

This cool and creamy salad can also be made with cucumber and served with a classic pita or on toast or alongside grilled fish.

2 bunch kohlrabi
1 cup plain yogurt
1 lemon, zest and juice
1/2 cup chopped herbs-- dill, parsley, cilantro, basil
6 garlic scapes


  1. Trim and peel the kohlrabi then cut into matchsticks
  2. Mince the garlic scapes
  3. Combine the yogurt, lemon juice, zest, and garlic scapes with a big pinch of salt
  4. Just before serving, add the chopped herbs to the yogurt to finish the tzatziki
  5. Dress the kohlrabi with the tzatziki dressing and serve
