Kale and White Bean Dip

This dip is creamy and just as good on a pile of veggies or schmeared on the bread side of sandwiches.

2 bunches of kale
4 cloves garlic or 2 garlic scapes
1 12oz can white beans
1 lemon, zest and juice
1/2 cup olive oil


  1. Cut the kale into ribbons
  2. Mince the garlic
  3. In a food processor blend the kale, garlic, beans, lemon zest, juice, and olive oil with a big pinch of salt
  4. Blend until smooth and bright green
