Jerk Tofu Lettuce Wraps

This take on a classic is a hearty, vegan option for a hand on dinner.

Ingredients

2 boxes tofu, cut into cubes
1 cup cornflour or Granor dredge
1 jar jerk sauce
3 heads butter lettuce
5 radishes, sliced thinly
3 scallions, sliced thinly
1 clam shell micro cilantro
1 pint snow or snap peas, sliced thinly

Method

  1. Heat 1/2 cup neutral oil in a large frying pan over medium high heat
  2. Toss the tofu cubes in the cornflour or dredge and shake off the excess
  3. Pan fry the tofu until golden brown and crispy
  4. Remove from the pan with a slotted spoon and then immediately toss in the jerk sauce
  5. Separate the leaves of the butter lettuce and lay out on a platter
  6. Toss the radish, scallion, micro cilantro, and peas together with a glug of olive oil and pinch of salt and pepper
  7. To serve, spoon the tofu into the lettuce wraps and top with the radish salad
