Hollow Pie

This is an unconventional Shepard's Pie inspired by Brett and Molly of Verdant Hollow, where we get the ground lamb.

Ingredients

2 large squash, cut in half
2 apples, diced
1 orange, zest and juice
1 lemon, zest and juice
1 tbsp soy sauce
1 tbsp maple syrup
4 oz cheddar cheese, grated
1/2 tsp chili flakes
1 tsp cumin
1 onion, sliced thinly
4 cloves garlic, minced
1 lb ground lamb

Method

  1. Heat oven to 400 F
  2. Place the squash cut side down and bake until tender
  3. Toss the apples in a glug of olive oil, pinch of salt, and several grinds of black pepper and bake until caramelized and tender
  4. When the squash is done, remove from the oven, scoop out the seeds, and transfer the flesh to a mixing bowl
  5. Add the apples, citrus zest, juice, soy sauce, maple syrup, and cheese
  6. In a frying pan, heat a glug of olive oil over medium heat
  7. Briefly fry the cumin and chili flakes for 30 seconds
  8. Add the onion and garlic with a big pinch of salt and sweat until soft
  9. Add the lamb and cook until cooked through
  10. Top with the squash mash and return to the oven to melt the cheese, about 15 minutes
  11. Serve with a big spinach salad
