Grilled Scallions with Almond Relish

This almond relish is great on lots of things, but I like it best on very well-charred scallions or grilled whole onions.

1 bunch scallions
1 cup almonds, toasted
1 bell pepper
5 sun-dried tomatoes or 1/4 cup tomato paste
5 garlic scapes
1 lemon, zest and juice
1/2 cup olive oil


  1. Heat the grill to medium.
  2. Clean the scallions and set aside to let dry.
  3. Char the bell pepper to cook and then remove the skin and seeds. 
  4. Slice the dried tomatoes and garlic scapes.
  5. In a food processor, combine everything except the scallions with a big pinch of salt and pulse to combine into a rough, chunky paste.
  6. Grill the scallions and then spoon the almond relish over the scallions and serve.
