Grilled Radicchio with Marinated Salmon

Smokey and slightly bitter, grilled radicchio loves being paired with the bright richness of fish salad. We love using any sort of tinned fish to make the salad but you could also use left over roast fish too.

2 heads radicchio, cut into quarters
1 tin hot smoked salmon, fishwife or other brand
5 garlic scapes, minced
2 tbsp olive oil
2 tbsp white balsamic vinegar
5 sprigs parsley, minced


  1. Heat the grill to medium high and drizzle the cut radicchio with olive oil and a pinch of salt
  2. Grill until the outside is charred and frilly, about 5 minutes on each side
  3. While the radicchio grills, stir together the rest of the ingredients to make a loose fish salad
  4. Remove the radicchio from the grill and spoon the fish salad all over the wedges and serve
