Grilled Chicken with Tomatillo Sauce

This sauce keeps for weeks on end. Store in the fridge and taste periodically to be sure that is still bright and acidic. If it tastes flat, add some vinegar or lime juice.

6-8 chicken thighs, legs, or breasts
1 qt tomatillos
1 onion
3 cloves garlic
1 bunch cilantro
1/2 tsp salt
1/4 C neutral oil


  1. Heat the grill to hot
  2. Hull the tomatillos and rinse
  3. Cut the tomatillos in half and grill until well charred
  4. Roughly chop the onion and garlic
  5. In a food processor combine the grilled tomatillos, onion, garlic, cilantro, salt, and neutral oil
  6. Blend until smooth
  7. Season the chicken liberally with salt and pepper
  8. Grill the chicken and when cooked through remove and let rest 7-10 minutes
  9. Serve with the tomatillo sauce
