Green Falafel Patties

Falafel patties are easy to make because you can pan fry them just like pancakes. They are perfect tucked into homemade pita, with lots of greens, and drizzled with tahini dressing.

1 lb pinto beans or chickpeas
1 package arugula microgreens
1 package cilantro microgreens or 10 sprigs cilantro
1 onion, diced
4 cloves garlic, minced
1/2 tsp cumin seed
1/2 tsp corriander seed
1 tsp smoked paprika
1 tsp salt


  1. Soak the beans over night or at least 8 hours
  2. In a food processor blend all ingredients into a chunky paste
  3. Heat a hefty glug of neutral oil in a frying pan over medium heat
  4. Scoop the bean mixture into golf ball sized portions
  5. Pan fry each portion and flatten with the back of a spoon or spatula
  6. Fry until golden brown then flip and brown the other side
  7. Remove from the frying pan and continue with the rest of the mixture
  8. Serve warm or room temperature with tahini, more greens, and pita
