Garlic, Lemon, and Potato Sheet Tray Chicken

This one pan roast chicken is fast and satisfying

1 whole chicken, broken down into 6 piecees
2 lbs potatoes any variety, cut into wedges
1 lemon, washed and cut into thin slices
5 cloves garlic, smashed left in their paper
1 tsp fennel seed
3 sprigs rosemary (optional)
1 cayenne pepper, sliced thinly, or 1/2 tsp dried chili flakes


  1. Heat oven to 400F
  2. Toss the potatoes, garlic, lemon slices, fennel seed, chili flakes (if using) and rosemary if using with several glugs of olive oil and a couple big pinches of salt
  3. Lay evenly across a rimmed baking sheet
  4. Toss the chicken pieces with some olive oil and a couple pinches of salt and then nestle amongst the potatoes, skin side up
  5. Bake until the chicken and potatoes are cooked through, about 45 minutes
  6. Remove and serve with a big green salad
