Farmer's Salad

A Farmer's Salad is both hearty enough to fill up a hard-working belly but also celebrates whatever season you are in by adding a copious amount of shaved, in-season vegetables.

1 bag lettuce
1 cup shaved vegetables-- carrots, radishes, turnips, asparagus, cucumber etc
2T apple cider vinegar
1/4 cup olive oil
salt and pepper
1 cup granola or savory oat sprinkle (see separate recipe)


  1. Combine the lettuce and shaved vegetables in a large bowl
  2. Dress with the vinegar and olive oil with a big pinch of salt and black pepper
  3. Garnish with the granola or savory oat sprinkle and serve
