Eton Mess

These can be built as individual jars or break up the meringue and make a big bowl to serve a crowd.

Ingredients

6 oz egg whites
9 oz sugar
1/2 tsp salt
1/4 tsp cream of tarter
1 cup heavy cream or custard
2 lbs fruit-- cranberries, currants, strawberries, etc
1 cup sugar
1 orange, zest and juice
1 tablespoon vanilla

Method

  1. Heat 2 inches of water in a sauce pan
  2. In a mixing bowl combine the egg whites, sugar, salt, and cream of tarter
  3. Whisk regularly and bring to 170F then beat with a mixer until stiff peaks
  4. Heat oven to 200F
  5. Spread the meringue on a parchment or silpat-lined baking sheet and bake until completely dry (about 2 hours)
  6. Combine the fruit, sugar, orange juice, zest, and vanilla and cook down to a compote and then cool
  7. To serve: break up the meringue into irregular pieces then layer with the whipped cream or custard and the fruit compote and serve immediately
