Cowboy Grilled Broccoli and Bread Cheese

This take on broccoli and cheese is punchy and fun and a delightful side dish.

Ingredients

2 lbs broccoli, cut into florettes
1 tbsp Spicewalla Cowboy spice (or 1 tsp herbs de provence, 1 tsp smoked paprika, and 1/2 tsp cumin, 1/2 tsp lemon zest ground and blended)
1 tsp chili flakes
1/4 cup olive oil
1-2 packages bread cheese

Method

  1. Heat oven to 400F
  2. Toss the broccoli with the spice mixture and a big glug of olive and hefty pinch of salt and roast on a baking sheet until deeply caramelized and tender, about 25 minutes
  3. Meanwhile toast the chili flakes in a dry skillet and then remove from the heat and add the olive oil to make a quick chili oil
  4. Cut the bread cheese into wide pieces and add to the baking sheet with the broccoli and return to the oven for 7 minutes or until the cheese is soft
  5. Remove from the oven, transfer to a serving dish, and spoon the chili oil over liberally and serve
