Cornmeal Spoon Bread

Serve this anywhere you would corn bread. It is lighter and fluffier but bakes up quickly for a mid-week meal.

3/4 cup cornmeal
1 tsp salt
4 tbsp butter, melted
2 eggs, beaten
1 cup milk
2 tsp baking powder


  1. Heat oven to 350F
  2. Grease an ovenproof baking dish or frying pan
  3. Combine the cornmeal, salt, milk, eggs, baking powder, and butter whisking out any lumps
  4. Pour into the prepared baking dish and bake until the edges are just set and lightly browned, about 25 minutes
  5. Let cool slightly but serve warm or reheat just before serving
