8oz butter, softened
435g sugar
1/2 tsp anise extract or ground fennel seed
2 eggs
10g salt
460g all purpose flour
60g cornmeal
13g baking powder


  1. With a mixer cream the butter and sugar until light and fluffy
  2. Add the anise extract and eggs and continue beating until well-combined
  3. Combine the salt, flour, cornmeal, and baking powder then add to the butter mixture
  4. Mix into a cohesive dough
  5. Scoop into 2 tablespoon sized balls
  6. Freeze for minimum 60 minutes to set the dough
  7. Heat oven to 375F and bake until golden brown (about 8 minutes)
