Chicken Lettuce Wraps

This makes a light lunch on the go or toss all together as a big salad.

1 head lettuce
2 cups roast chicken meat pulled into pieces
2 cups shelled peas
1 bunch scallion
1 lemon, zest and juice
1/4 cup olive oil
1 bunch cilantro


  1. Separate the lettuce leaves, wash and dry
  2. Slice the scallion thinly
  3. Roughly chop the cilantro
  4. Combine the scallion, peas, lemon zest, juice, and olive oil with a big pinch of salt
  5. Let the scallion mixture sit for 10 minutes and then toss with the chicken meat
  6. Wrap the chicken meat in the lettuce leaves and serve
