Cherry Tomato Confit

This is our number one way to preserve tomatoes. Even if you don't want to save the harvest for later, this is a nice way to add tomatoes to a cheese board, sandwich, or quick pasta.

5 lbs cherry tomatoes, any variety
1 cup olive oil
3 cloves garlic,minced


  1. Heat oven to 375F
  2. Combine all the ingredients in a large baking dish along with a hefty pinch of salt
  3. Bake until the tomatoes burst and their liquid reduces to a thick sauce
  4. Remove from the oven and allow to cool
  5. To store, pack into a freezer-safe container and freeze for up to one year
