Sour Cherry Cardamom Muffins

These muffins are light and fluffy and made perfectly well with any berry-- even frozen.

2 C all purpose flour
2 1/2 tsp baking powder
1/3 C sugar
1 tsp salt
2 eggs
3 T melted butter
1 C milk
1 1/2 C frozen sour cherries
1/4 tsp ground cardamom
1 T brown sugar and a pinch of salt


  1. Heat oven to 375F
  2. Whisk together flour, baking powder, sugar, and salt
  3. Whisk together eggs, milk and melted butter
  4. Combine the wet ingredients and the dry ingredients
  5. Scoop into muffin tins
  6. Add cherries to the muffins in the cups (this helps keep the fruit from staining the batter)
  7. Combine the cardamom, extra sugar, and pinch of salt
  8. Top with a sprinkle of cardamom sugar
  9. Bake until a knife inserted in the center of the muffin comes out clean (about 12-15 minutes)
