Bulgogi Bowl

This vegan dinner is incredibly satsifying and can be served room temp if you are too hot for a warm plate.

Ingredients

1 box firm tofu, cut into cubes
1 bottle We Love You Bulgogi Sauce
2 cups cooked jasmine rice
2 kohlrabi, peeled and cut into matchsticks
2 cups shredded napa cabbage
1 bunch radish, sliced thinly
4 scallions or mini onions, sliced thinly
1 cup kimchi
1 bunch cilantro, chopped

Method

  1. Broil or grill the tofu until caramelized and warmed through
  2. Immediately toss with the bulgogi sauce, it will feel like too much but saucy is good
  3. Combine the kohlrabi, radish, cabbage, scallion, kimchi and cilantro with a glug or two of oil (sesame if you have it) making a big salad
  4. Divide the rice between four bowls
  5. Top with the tofu and then the kohlrabi salad
