In a large frying pan heat a good glug of neutral oil over high heat until smoking
Add the peas with a pinch of salt and let cook, undisturbed, until slightly charred and starting to blister
Stir and blister the other side
Remove from the heat and immediately add the citrus zest and pepper flakes
To serve place the burrata on a plate or serving platter and pile the peas up near by, finish with a big drizzle of olive oil, flurry of herbs (if using), and pinch of salt
