Blistered Cucumbers

I know, I know. Cooking cucumbers is crazy. Except that it is delicious and a great way to work through the glut of cucumbers in the middle of summer.

Ingredients

3-5 cucumbers
olive oil
salt

Method

  1. Cut the cucumbers into large wedges or planks
  2. Heat a big glug of olive oil in a frying pan until smoking
  3. Pat the cucumber dry and place in the oil cut side down
  4. Hold your nerve. The cucumbers will spit and sizzle. Allow them to brown and blister
  5. Flip and sear the other cut side
  6. Remove from the frying pan and season liberally with salt
