Black Pepper Berry Baked Ricotta

This is one of our favorite dips for entertaining or combine with a big salad for a light dinner.

Ingredients

16 oz ricotta
1 egg
6 oz blueberries or raspberries, fresh or frozen
1/2 cup olive oil
1/2 tsp chili flakes
1/4 tsp herbes de Provence or dried thyme
1/2 tsp coarsely ground black pepper
crackers or toast for dipping

Method

  1. Heat oven to 400F
  2. Beat the ricotta and egg with a pinch of salt until combined then transfer to a baking dish and bake until the ricotta mixture is set, about 12 minutes
  3. While the cheese is baking, combine the berries, 1/4 cup of the olive oil, chili flakes, herbs, black pepper, and a pinch of salt
  4. Remove the ricotta from the oven and top with the berry mixture and then return to the oven. Bake until the berries have just burst, about 8 minutes
  5. Remove from the oven and let rest for 5-10 minutes
  6. Serve the warm cheese with crackers or toast alongside for dipping
