Balsamic Watermelon

This can be a fruit salad for breakfast, dessert, or a side. This is also one of the times to use the best balsamic you can get your hands on.

1 watermelon
1 C pistachios
1/4 C balsamic vinegar
2 T olive oil
10 sprigs mint or basil


  1. Cut the melon into large pieces
  2. Toast and roughly chop the pistachios
  3. Arrange the melon on a serving platter
  4. Season with a pinch of salt and then drizzle with the vinegar and olive oil
  5. Scatter the pistachios over the whole lot 
  6. Garnish with torn basil or mint
