Turkey Paprikash

This comforting sauce can top anything from pasta to rice to polenta.

2 lbs turkey meat, light or dark
1 onion, sliced thinly
3 cloves garlic, minced
1 tbsp sweet paprika
1 tsp smoked paprika
2 28 oz cans of ground tomatoes
1 cup heavy cream


  1. Heat oven to 375F
  2. Season the turkey liberally with salt and pepper and then roast until cooked through
  3. Allow turkey to cool and then shred
  4. In a medium sized sauce pan, heat a big glug of olive oil over medium heat
  5. Add the onion, garlic, paprika with a big pinch of salt and sweat until soft
  6. Add the tomatoes and bring to a simmer and let simmer for 10-15 minutes until slightly thickened
  7. Add the shredded turkey meat and any jus
  8. Taste and adjust the seasoning as desired
