Turkey Paprikash
This comforting sauce can top anything from pasta to rice to polenta.

Ingredients
2 lbs turkey meat, light or dark
1 onion, sliced thinly
3 cloves garlic, minced
1 tbsp sweet paprika
1 tsp smoked paprika
2 28 oz cans of ground tomatoes
1 cup heavy cream
Method
Heat oven to 375F
Season the turkey liberally with salt and pepper and then roast until cooked through
Allow turkey to cool and then shred
In a medium sized sauce pan, heat a big glug of olive oil over medium heat
Add the onion, garlic, paprika with a big pinch of salt and sweat until soft
Add the tomatoes and bring to a simmer and let simmer for 10-15 minutes until slightly thickened
Add the shredded turkey meat and any jus
Taste and adjust the seasoning as desired
