Spring Stir Fry

Welcome Spring! Longer days and more vegetables all together in one quick fry up.

Ingredients

3 cloves garlic, minced, or 2 stalks green garlic, sliced thinly
2 inch long piece ginger, peeled and minced
1 bunch broccolini, cut into 2 inch long pieces
1 bag bok choy, each choy halved
1 cup cooked brown rice (optional)
2 tbsp fish sauce or liquid amino acids (optional)
2 tbsp soy sauce
1 bunch radish, sliced thinly
1 bag pea shoots
1 clam micro cilantro or basil (or both)
1/4 cup chili crisp (optional)

Method

  1. In a large frying pan, heat a glug of neutral oil until shimmering hot
  2. Add the ginger and garlic with a hefty pinch of salt and cook until fragrant, about 45 seconds
  3. Add the broccolini and choy and toss to coat then allow to sear until lightly caramelized
  4. Add the rice and toss to mix
  5. Add the soy sauce and fish sauce (if using)
  6. Taste and adjust the seasoning as desired
  7. Remove from the heat and add the radish, pea shoots, and micro greens
  8. Serve with a dollop of chili crisp over the top (if using)
