Spinach Green Curry

We rely on the Little Truc curry pastes for a fast mid week meal!

2 cups long grain rice
1 pouch green curry
1 block tofu
1 cup oat or coconut milk (optional)
2 bags frozen spinach


  1. Bring a large pot of salted water to the boil and boil the rice as you would pasta
  2. In a frying pan, heat a glug of neutral oil and fry the curry mixture until fragrant
  3. Rinse the pouch with the coconut or oat milk if using and add to the pan
  4. Add the cubed tofu and spinach
  5. Bring to a simmer
  6. Divvy the rice between serving bowls and top with the curry
